Any advice for new vegan trying to be healthy (recipe wise)?
I recently turned vegan from "junk food vegetarian" (mostly ate chips and annie's macaroni and fruit and peanut butter) and I have never felt better. I lost three pounds and my waist looks a lot trimmer and my face is no longer acne-ridden (first time since I was 12 lol). I feel great but I am getting bored with my food, mostly it's pasta, red sauce, raw veggies, raw fruit and asian noodle bowls
Any easy (really easy) recipes I might like? I have no idea how to cook with vegan ingredients, I'm used to throwing together combos of bread and cheese but that's no longer an option. My favorite foods are Italian and Mexican. I'm not big on Asian but it's growing on me from eating thai noodle bowls. Please help my taste buds are about to revolt!

Try to find a copy of "Vegan Cooking for One" by Leah Leneman. It's very purpose is to get vegans out of the rut of eating the same thing all of the time (either for lack of knowledge, or because we tend to cook for six and eat for one, so end up eating the same meal for a week).
The meals are (mostly) very simple and quick to prepare and many of the are really great (I've only done one that I would not make again). She sets up a weekly shopping list, and corresponding recipes so you use up all of the food on the list by the end of the week, but of course you can use it like a regular cookbook if you prefer.
