What is a great veggie choice to accompany a wonderful entre'?

I'm looking for a good veggie side for a "secret dinner" for guests including about 6 of my vegan and vegetarian friends. They have come to enjoy my "secret dinners" as respite from a boring diet, knowing that their "secret" is safe with me"

I have a wonderful endive and bibb lettuce w/ vinegar and oil and soup course (chilled lobster bisque), charcoal grilled 1 1/2" salmon steaks with dill-lemon-butter sauce and steamed cauliflower with a light coating of melted gruyere. Dessert will be a multi-layered berry, dark & light chocolate parfait, with devonshire cream and ice cream layers and loaded with homemade whipped cream.

I need another veggie-side dish for the salmon entre'?

So many sound good ... I may do more than one .. .chilled avocado, grill asparagus and put those pecans and maple syrup over grilled green beans. This way they will have a nice selection.

maybe try Roasted root veggies with toasted pecans and maple syrup. Roast beets,sweet potatoes, potatoes and baby carrots with sea salt and olive oil. Toast pecans and break over veggies with a tiny bit of Maple syrup so good
