Answers:

That is why they are sold fresh and unrefrigerated, they are made as stated with wheat flour, wheat starch, water, salt and veg oil.

In Japan they are eaten in soups, in stews, as a strir fry accompaniment, cold in sesame sauce. I buy them in the Chinese markets here in Toronto Canada, there are rice noodles and some that resemble Udon, rice noodles are like regular semolina pasta, a mix of rice flour water and dried with heat, no eggs. And for veggies and vegans they are a good source of protein, I make a mock bolognese sauce with TVP a soya based protein when it cooks it is like ground meat, so you can have pasta and sauce and not be losing the protein values, I use lots of onions, fresh mushrooms, garlic and spices, and have fooled many a friend with it

I guess being a chef and working in the Far East let me learn a few tricks, so enjoy the udon and find out how versitile it is.
