Does anyone know of vegetarian alternatve to using bacon in a clam chowder recipe?!

Does anyone know of vegetarian alternatve to using bacon in a clam chowder recipe?

I am looking for something that would have that bacon flavor but that would also add the fats you would use to saute the onions in. I thought of vegetarian bacon strips but that does not seem like it would work as well.


Answers:

You can use a regular oil for sauteeing the vegs., then add a drop or two of liquid smoke to the soup before serving. Add this very slowly, it is strong. But it is all natural (usually) and totally vegetarian. It is made by distilling pieces of charred hickory wood with water. the vapor is collected & that is what "liquid Smoke" is.
