THESE ARE EXPENSIVE, DO NOT USE THEM AS A GENERAL IDEA OF HOW MUCH BEING VEG COSTS

Legumes-beans, peas, lentils, nuts, seeds, soy and meat analogs ("fake" meat).

Grains-pasta, bread, rice, cereal/granola, seitan/wheat gluten.

If you want to know what is good for adding to noodle and rice dishes, I would recommend marinated or fried tofu, fried wheat gluten from an Asian supermarket, Morningstar beef or chicken strip "Meal Starters", bulk dry TVP with or without wheat gluten, that can be marinaded during or after rehydration.

The best time to use tofu is when you are using East Asian
recipes. They have been using tofu for thousands of years, so they actually have a clue how to use it palatably.
