What an interesting question, since cottage pie by custom and definition is made from beef mince. When made from lamb it is shepherd's pie, and fish - fisherman's pie. I have no idea what it might be called with a meat substitute.
For cottage and shepherd's pie, it is basically a thick sauce made with leftover cooked meat with the addition of some sauted finely chopped onion and Worcestershire sauce. This is covered with mashed potato and browned in the oven.
For four:
100gm chopped onion
35gm fat or oil
400gm meat substitute
tsp Worcestershire sauce
125-250 ml demi-glace or stock
400gm cooked potato
25gm butter
Cook onions in oil without colouring. Add meat substitute season and add sufficient stock / sauce to bind. Bring to the boil and simmer for a few minutes.
Prepare mashed potato.
Place sauce in an earthenware dish. Cover neatly with mashed pototo. Brush with milk or eggwash.
Brown lightly in hot oven or under grill
