When you bake veggies so they are hard and dehydrated, are there any nutrients left?

Research suggests that some nutrients are lost in this process but there are actually some dried foods such as beans and peas (reconstituted of course) that are recommended for good nutrition, so certainly not all valuable nutrients are lost.
I would say you biggest risk factor may be taste. If you are happy with your dried baked veggies I say rock on!
