Answers:

Nuts, fruits, and soy beans. Balance Bars for snacks the are 30/30/40 protein. Have a little bottle of water frozen for your ice pack, so you can toss it out. Bring yogart, and foods you would normally enjoy. Make veggy and cheese sandiwiches in advance.

Hard Boiled Eggs travel well.
Pasta salads, with pine nuts. oh there are endless options.

try trader joes in your area, and get little premade veggie meals with protein, and don't forget the soy bean toasted ones! yum! www.traderjoes.com

Nuts and fruits every 2 hours will keep you going through out the trip. be sure to stay up on your protein and drink your water. Good luck, and have fun.

Eatting Veggy style, shouldn't be much more difficult than preparing for any other trip.

use an 8-12 ounce frozen bottle of water to keep your food cool, and or buy disposable cold packs, brown bag it, in a plastic bag, and pack your lunch and fruits, veggies, 3-bean salad, nuts of all kinds. and soy treats! Protein Bars are great too!

just have fun.
