Enzymes in Cheese?!

Question:

Enzymes in Cheese?

I've been a vegetarian for a couple of months now and have continued to eat cheese and eggs. Recently I was told that some cheese has enzymes from baby cow's stomaches. When you look at the ingrediant list it just says enzymes. How do you know what type of enzyme is in the cheese? Any links would be appreciated. I'm especially interested in sliced cheese.

Answers:

Getting rennet from calf's stomachs is expensive. Rennet is now produced from genetically engineered bacteria. Most cheese uses the cheaper rennet, or other enzymes.

Here's a link with info on brand names that are suitable for vegetarians. There are a ton of them! http://cheese.joyousliving.com/...
