I would recommend getting a good rice cooker (Right now, Target has an excellent one for $15). With that, you can cook all sorts of grains and even pasta; there is also a steamer attachment with which you can steam veggies and other stuff, so you can simply spend about 2 minutes preparing the meal, let it cook for 10-15 minutes, and then have delicious food.
Also, since most protein in the average person's diet comes from meat, you'll need to find an alternate source. Spinach, peanuts, beans, and especially soybeans are very good sources of protein. Dairy products and eggs also contain high amounts of protein, but it depends on what kind of vegetarian you are whether you can eat those. Cheddar cheese contains high amounts of vitamins A and B12.
Also, take multivitamins (centrum, one-a-day, etc.) That way if there's some nutrient you're missing, you'll basically cover all bases.
