Noodles and co tofu?!

Noodles and co tofu?

I love Noodles and Co's tofu. Does anyone know how they make it?? I just recently turned Veggie and am struggling on how to make good recipes with tofu. Any help would be appreciated!

We love Tofu at home. I cook it in many different ways:
Pan fried noodles with tofu, pak choi and soy dipping sauce

For the noodles
110g/4oz noodles
3 tbsp vegetable oil
For the dipping sauce
2 tbsp honey
2 tbsp soy sauce
dash Tabasco sauce
1 lime, juice only
1 tbsp peanut butter
2 tbsp fresh coriander leaves, chopped
For the tofu
110g/4oz tofu, cut into strips
2 tbsp vegetable oil
For the pak choi
2 pak choi
2 tbsp vegetable oil
1 tbsp soy sauce
To garnish
fresh coriander leaves, chopped



Method
1. Bring a large pan of water to the boil.
2. Cook the noodles according to packet instructions and drain.
3. To make the dressing, place the honey, soy sauce, tabasco, lime juice, peanut butter and coriander in a bowl and mix together.
4. Toss the drained noodles in three tablespoons vegetable oil and pan-fry for 2-3 minutes each side, until crispy.
5. To cook the tofu, heat the oil in a frying pan and cook for 1-2 minutes either side.
6. Remove from the pan and toss in the dressing.
7. Stir the pak choi in the pan with the vegetable oil and sauté for a few minutes until soft. Stir in the soy sauce.
8. Serve the tofu on top of the noodles and alongside the pak choi. Finish by drizzling the dressing over, and garnishing with fresh coriander.

This one is one of my favorite:
Salt and Pepper Tofu

1 lb firm tofu
2 teaspoons salt
2 teaspoons garlic powder
1 teaspoon fresh ground black pepper
3 tablespoons cornstarch
3 tablespoons vegetable oil

Drain the tofu: Place several paper towels on a cutting board; place the tofu on the cutting board, and then place a heavy object such as a plate or book on top.
Drain the tofu for at least 15 minutes, changing the paper towels as required (If possible, it's helpful to tilt the cutting board so that the water drains directly into the sink).
Cut the tofu into cubes.
Mix together the tofu with the salt, garlic powder, and black pepper, and allow to marinate for 1-2 hours in the refrigerator.
Toss the tofu cubes with cornstarch to coat.
Heat oil in wok or large skillet.
Carefully add the tofu to the wok, add fry in small batches until tofu is golden; drain on paper toweling, and serve hot.
Serve with Asian condiments, if desired.
