Can vegans eat canned vegetables?
I'm considering going vegan and was wondering if eating canned veggies was ok, or if they lack the nutritional value of fresh veggies. I have no problem with fresh veggies except they go bad a lot quicker than canned veggies. What do you vegans think?

Fresh is usually best, but some frozen veggies are actually fresher and retain more nutrients. By the time produce travels to your store, it's often days or even weeks from the fields, but some frozen veggies are flash-frozen within hours of picking. So, if you're looking for a longer-lasting alternative to fresh produce, frozen is best. Canned veggies lose some of their nutritional punch, often have salt added and (in my opinion anyway) don't taste nearly as good as fresh. Corn is about the only veggie that survives the canning process and still tastes like what it's supposed to taste like (green beans? not even close!) Ecologically speaking, you should try to stick with fresh, local produce as much as possible - it's tastier because it didn't travel so far and less fossil fuels were burned to get it to your table.
