How do you hydrate TVP & what is the yield?!


Question:

How do you hydrate TVP & what is the yield?

rather than buying veggie crumbles from the store, i'm experimenting with texturized vegetable protein (TVP). i bought it in bulk from Whole Foods & i do believe that the directions said that four ounces dry yields eight ounces once hydrated. anyone with experience with TVP out there? help!

Answers:

Screw Morningstar. Just mix equal volumes of TVP and hot water with added spices. Toss in a few tablespoons of vital wheat gluten if you like to improve texture. Let soak until most of the water is absorbed. Before adding to dishes, add to a pan with just enough hot oil to cover the bottom. Stir until slightly browned.

TVP should never be microwaved. NASTY.
