Marinating tofu?!

Marinating tofu?

If I add oil to the marinade, will it aid the absorption of flavor or hinder it?

Answers:

It depends on how you make the make the marinade. If you warm the marinade the oil soluble flavors in the rest of the ingredients will permeate the oil and thus give a more flavorful marinade.

Adding cold oil to cold marinade can result in a decrease of flavor since the oil may coat (and thus seal) the flavoring ingredients.

BTW; warm marinade is more easily absorbed by tofu! It also helps (of course) to dry the tofu (squeeze the excess water out) and if you (gently) squeeze the dried tofu whilst submerged in the marinade it will absorb more of the liquid.
