What's the first step to eliminating meat from your diet?

I think I am ready to transition into becoming a vegetarian. As of right now I do not eat large amounts but I do eat small amounts of chicken and some beef? - What's my first step?

You've already made the first step--reducing the amount of meat you eat. All you need to do now is just stop eating it. Get a few vegetarian cookbooks and check out www.vegweb.com for more recipes. There are tons of books out there on becoming vegetarian, such as "Being Vegetarian for Dummies."

There are tons of analogues out there if you still crave the meaty texture and flavors--more than I can mention. You're sure to find some you like.

If you're going out to eat, check out www.happycow.net and www.vegdining.com to find vegetarian and veg-friendly restaurants in your area. Try to find out if there is a vegetarian society or Vegetarian or Vegan Meetups where you live.
