Calling all vegetarians!?!


Question:

Calling all vegetarians!?

Would you please give me an example of what you eat in a typical day...breakfast lunch dinner, snacks etc.


Answers:

Breakfasts I have:
Oatmeal
Cereal (I love Kashi GoLean Crunch for its extra protein and yummy taste)
Eggs with veggie sausage patties (I like Morningstar brand)
Pancakes with veggie sausage
Toast with peanut butter
Bagel and cream cheese

Lunches:
Cheese, lettuce, tomato sandwich (with mayo and/or mustard)
Avocado and tomato sandwich (with some mayo or salt and pepper)
Tomato, basil, mozzarella sandwich (with some pesto spread on the bread)
Veggie burger patty and salad
Big salad (with tofu if available, otherwise with chick peas or kidney beans for some protein)
Cheese pizza
A wrap spread with hummus and filled with lettuce, tomato, and any other fresh veggies I have on hand

Dinners (often with salad on the side):
Beans and rice (can use kidney beans, black beans, etc. Use mexican flavorings.)
Taco salad (heat some black beans with taco seasoning, sprinkle over lettuce, top with cheese, taco sauce... can also add scallion, cilantro and maybe avocado if you have it)
Spaghetti/ravioli/tortellini with tomato sauce
Gnocchi/ravioli/tortellini with pesto sauce
Vegetable lasagna
Tofu and vegetable stir fry (or just veggies if you don't like tofu) over rice
Grilled cheese with tomato soup
Veggie tacos (use seasoned beans or crumbled veggie burgers instead of the meat)
Quesadillas (add spinach, beans, or sweet potato inside to up the nutritional value)
Eggplant parmigiana
Roasted portobello mushroom (over pasta or with other sides)

Snacks:
Yogurt
Granola bars
Toast with peanut butter
Dry cereal
Popcorn
Fruit cup
Carrot sticks and dip
Hummus and pita



When eating out, I find Indian restaurants to be the most veggie friendly, followed by Italian, Thai (but specify "no fish sauce"), Mexican, and Chinese. About the only places it is hard for me to eat out are steakhouses, seafood restaurants, and Japanese restaurants (they use a lot of fish flakes and sauces).
