Lentils????!

Lentils????

Some recipes say to soak lentils to take out toxins and some don't. Can anyone shed any light on this?


Answers:

Lentils are fine of you don't soak them but cook them for a longer time. It's still necessary to wash them thoroughly though before you start.
Larger lentils may need overnight soaking, just to save time but smaller ones should cook in an hour anyway.

The toxins issue relates to certain pulses and dried bean, such as mung or red/kidney beans.

Also, there's no need to salt lentils until after they're cooked, as any earlier will slow down their softening time even further.
