Must haves for a vegetarian kitchen?!

Question:

Must haves for a vegetarian kitchen?

What are some foods, non perishables in bulk, that I should have in the kitchen for vegetarian cooking.

I buy my fruits and veges on a daily basis, but what should I get from cost cos and such that will keep for a prolonged time out of the fridge and in?

Answers:

things i always have:
pastas, canned tomatoes, the gigantor bag of basmati rice, canned coconut milk, bulgar wheat...
but i think ingredients are personal.
i like starches, maybe you dont.

good spices to have though...
chili powder, paprika, cumin, cardomom, oregano, nutmeg, chili flakes, bay leaves, thyme, crystallized ginger, mustard powder. and always..sea salt and fresh pepper (the mixed one rules!)
for the fresh ones, garlic, cerrano and jalapeno peppers, ginger, basil and parsley (or you can grow in the window or yard)

i can make quite a variety of dishes with those spices.
lots of mexican and thai

condiments i always have tapatio (hotsauce), red wine vinegar (sometimes others too like white wine and cider...)
soy sauce...obvi!
a few different types of mustard.
mayonnaise
peanut butter (not really a condiment...but oh well i just thought of it)
olive oil
