Ingredients

4 Tasses de riz (gros, mais pas deluxe. Le riz ne doit pas etre basmati)

1 Tasse de sucre ou plus selon votre go?t

1 Tasse de coco en poudre

? cuillière a café de sel

1 tasse d’eau

? cuilliere a café d’essence vanille

PREPARATION :

1.Lavez le riz et laisser tremper 2-3 heures. Bien egouttez et reduire en poudre.
2.Mettre le marmite rempli a moitié d’eau sur le feu 5 minutes ensuite remplissez le cola a plein avec la poudre de riz et posez sur la marmite. Laissez cuire environ 15-20 minutes, jusqu’a la fumeé commence a sortir par le haut du cola.
3.Prendre la manche d’une spatule et pousez le tamis du cola vers l’intèrieur pour retirez le riz qui a pris la forme du cola.
4.Ecrasez avec une fourchette et laissez reposez une nuit( si on le fait le matin, on peut s’en servir le soir, ou on le fait le soir pour le matin)
5.Quand c’est bien reposez ecrasez avec la main pour reduire en poudre, ajoutez le sucre,1/2 tasse de coco et la vanille. Melangez bien, ajoutez l’eau et le sel. Ensuite remplir le cola et faire cuire sur la marmite.
6.Mettre le marmite rempli a moitié d’eau sur le feu 5 minutes ensuite remplissez le cola a plein avec la poudre de riz et posez sur la marmite. Laissez cuire environ 15-20 minutes, jusqu’a la fumeé commence a sortir par le haut du cola.
7.Retirez du cola , arrossée le reste de coco et trancher quand c encore chaud avec un fil ou un couteau . Source(s):

Ingredients
Rice flour - 2 cups
Grated coconut - 1 cup
water - 1/2 cup
Salt to taste

Preparation ;
Mix the salt in water add the water little by little to the flour and mix it. The mixing should be proper so that the flour should not turn into dough form, it should be in the powdered form but wet enough for steaming. Add the grated coconut to it in layers with rice flour and cook it in the steam for about 5 to 8 minutes in the special puttu vessel. Serve.

Here is the recipe for sweet puttu, a variation:

Ingredients:
Rice flour - 1 cup
Jaggery(Sharkkara) - 1 cup
Cardamom(Elakka) powder - 1 tsp
Salt - A pinch
Ghee - 2 tsp

:1)Fry the rice flour till it turns colour to red.

2)Add salt to it along with a little warm water and mix well in the same way you make the usual puttu.

3)Make puttu with the above mixture in the usual way using "puttukutti".(the vessel)

4)Heat up a pan.

5)Add jaggery and just enough water so as to get the jaggery dissolved.

6)Allow it to boil till it reaches a three threads` consistency.

:- To make the consistency test, drop a small amount of the above jaggery mixture into a vessel filled with water. Pick it up and if u can see it showing three threads, then it is ready.

7)Add the above puttu(crumbled) and ghee into the above jaggery syrup.

8)Mix the whole thing very well.

9)Add cardamom powder and mix well again.

10)Add roasted cashews, if desired.

Puttu is another common breakfast in Kerala. It is made out of rice flour and is cylindrical in shape. Puttu is made with the help of a Puttu maker. Puttu maker is a steamer which is cylindrical in shape. These are available in the Indian grocery stores. Many people use idly moulds also to make puttu recipe. Nowadays Instant puttu mix is available in Indian grocery stores. The dish has to be made with lot of coconut. I make this recipe to recall the memories of my home. Puttu has kadala curry as its accompaniment. Ingredients : Recipe for two
2 cups of raw rice
1 cup of coconut
Salt to taste
Method
Soak the rice for two hours and strain it. Spread the rice in a cloth or a plate and allow them to dry. Grind the dried raw rice to a fine powder in the mixer. Mix salt in water and add the water little by little to the rice flour and mix it. You should be careful while mixing the water to the rice flour. It should not change to dough. It should be in a powdered form wet enough for steaming.
Now add a fistful full of grated coconut in the puttu maker and then add the rice flour till half, then add another handful of coconut. This is done till you reach the top of the cylindrical shape.
Close the lid and steam for 4-5minutes.
Serve hot with kadala curry
