I just found out directly from the whole foods website that the olives they sell are raw!
from the website- "the olives you'll find in our stores are unpasteurized"

Thanks for all your help. In most Whole Foods Markets, they have olive bars that have some really awesome raw olives. My favorites are the herbed ones on top of raw flax seed crackers with raw salsa.

My husband & I had that for breakfast once!! It was kinda romantic too!

Olives are cured. The 2 most common methods used to cure are soaking in a salt brine or soaking in lye. Either way, the olives are heavily rinsed and packed for canning. The canning process involves heating to a high temp and holding until bacteria has been killed. At that point, the can or bottle is sealed and allowed to cool. nothing canned or jarred is raw. all foods that are commercially canned and jarred are cooked (or prepared) to some degree before packaging to kill germs mainly but there are also other reasons
