How can I get tofu crispy?


I tried to make sloppy joes with it and the flavor was great, but the texture was too mushy. I've heard you are suppose to freeze it, but how do I do that? Do I squeeze all the water out and then put it in the freezer? I'm confused please help!

Let's say I don't want to make sloppy joes...How do I get it crispy? When you freeze tofu (get the firm kind) it takes on the texture of hamburger after it is thawed. You can crumble it and use it for almost any dish.
When you thaw it, put it into a colander and let it drain for about 30 minutes before you use it. After it has drained, brown it lightly in some oil and add to the sauce.
I have made sloppy joes and spaghetti sauce with it this way and no one could tell the difference. Tofu sloppy joes will never be what you are wanting them to be.

You need to use TVP or Morningstar crumbles

If you use tvp, let it absorb an equal amount of water and then add to a pan that contains a few tablespoons of very hot oil and stir until browned. Then add it your sloppy joe sauce. Unfortunately, the only way I know to get it really crispy is to bread it and fry it. If anyone else knows a better way, I'd love to know. Batter and deep fry it. squeeze all the water out, slice it thinly and fry it. Deep fry it in olive oil. That should do it. Crunch, crunch away. Enjoy. I have tofu tips in my profile. You have to drain out all the water from the tofu before you freeze it. It's not really crispy, but chewy. To get it crispy, you have to fry it.
