Vegetarian Casserole Recipe?
Does anybody know a really good vegetarian casserole receipe?
I want to make dinner for my boyfriend this weekend, and tried looking on-line for really good vegetarian receipes, but most I found contained meat, or some kind of meat sauce??? I don't get it, why do they call it vegetarian?
Anyways, anybody know any really good and tasty vegetarian casserole receipes????

Answers: You can replace meat wtih meat substitues, such as tofu, tempeh, or seitan. As for meat sauce, it depends on the type of sauce. Some recipe websites do not vet the recipes well, which is why some supposedly "vegetarian" recipes are not at all veg.
www.vegweb.com also has great recipes, and you will never ever see a meaty ingredient there, as they screen out nonveg recipes. this ones great!
Vegetarian Broccoli Casserole
INGREDIENTS
3 tablespoons butter
1 onion, chopped
2 (10 ounce) packages chopped frozen broccoli, thawed
(or you could use fresh if you prefer)
1 (10.75 ounce) can condensed cream of mushroom soup
1 cup shredded sharp Cheddar cheese
1 cup mayonnaise
2 eggs, beaten
1/2 teaspoon garlic salt
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 1/2 teaspoons lemon juice
12 buttery round crackers, crushed fine
2 tablespoons butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Melt 3 tablespoons butter in a medium skillet over medium-high heat. Saute onion until golden.
In a 2 quart casserole dish, mix together onion, broccoli, soup, cheese, mayonnaise, eggs, garlic salt, pepper, salt, and lemon juice. Sprinkle crushed crackers over top and dot with remaining 2 tablespoons butter.
Bake uncovered in preheated oven for 45 minutes, until heated through and browned on top. I love the "Enchanted Broccoli Forest" recipe from the cookbook by Mollie Katzen of the same name. It's pretty much a brown rice and broccoli caserole with a creamy sauce. You don't need the recipe for it necessarily, but I think you could find it or something similar online. I don't know it off hand, but my own version of it is to make brown rice, spread it in a caserole dish (9X13) and then stand broccoli florettes up in it like trees (hence, the forest reference) and then over that I pour a sauce that I usually make out of a couple of cups of organic cream of broccoli soup (it comes in a box at Whole Foods or Trader Joe's) mixed with some shredded cheddar and spices.
Or you could do something Italian, like an eggplant and zucchini lasagna with ricotta . . . you don't even need to use pasta for this unless you want to. The veggies do well on their own - it's more of a caserole - and can be layered easily. You could use sliced eggplant, onions, zucchini, yellow squash and your favorite tomato sauce. For more protein, crumble some tofu in with the ricotta.
