Raw nuts/legumes vs. Roasted- Which is considered healthier?



Answers: Roasting them can damage the oils, making them unhealthy. If you prefer the flavour of roasted nuts, you can roast them at a really low temperature, which doesn't destroy the oils. I roast almonds at 70 Celcius overnight (about 12 hours). Source(s):

I would think it may depend on how you roast but I go with Raw being better for you. the closer to the original source the better. Even though eating roasted or cooked is healthy, it takes some nutrients out in the process. Raw Vegetables or nuts are
the healthiest because the are packed with the most vitamins/minerals/nutrients According to nutrition labels, roasted have the same content as raw. However, plant a roasted almond and a raw almond...which one will actually grow? It'll be the raw if you were wondering. From that one example, I realized that raw contains all that is need for it to thrive, which means we receive all the great nutrients, unlike roasted. Also, it has been proven that many of the vitamins as well as amino acids are burned off when the item (be it anything) is cooked. SO all in all, raw is the better choice!

Just know that Almonds are no longer raw when grown in the USA. The stupid Almond Board of California felt they were dangerous to be raw so they are now pasteurized in one of two ways...read the link roasted tastes better I dont know for sure but i always choose raw. RAW any roasting kills the enzymes & nutrients. Raw, for sure. You damage oils and antioxidants with roasting. BUT, roasted nuts are still healthy and have many benefits.
