What is a good vegetarian alternative to slow cooked pot roast? I miss it!?
My family recently switched to a mostly vegetarian diet. Although we do not eat beef, pork, eggs or any dairy products we still occassionally eat fish and poultry. We really miss one of our favorite foods which is Sunday style, slow cooked pot roast with roasted carrots and potatoes. What are some alternatives? Additional Details

Relaxing just once to have pot roast is not really an option. I havent had beef in almost a year and havent had pork in about three years. About two months ago I craved a hamburger and boy was I sorry... it upset my stomach after just a few bites. I was hoping for some creative alternatives or new recipes for this red meat dish that might give the same kind of satisfaction.

Roasted root veggies are a good idea (i.e. parsnips, potatoes, carrots, onions, etc) . You can include some portabellas for that "meaty flavor" and perhaps some seitan. You can create a gravy from the juices that collect on the bottom of the pan and pour that over some homemade roasted garlic mashed potatoes. Yumm!
Actually, another alternative is to cook a tofurky with some of the same veggies.
I hope that helps. :-) Bake a chicken and a veggie lasagna. hmmm i dont think that theres anything else like a nice slow cooked pot roast....... but you can still roast veggies, of course they wont have the same flavor To tell you the truth as someone who rarely eats red meat ---IMO there is no substitute. It's one of those things you "give up".

However, since I believe in moderate, well-balanced diets, (which is is now defined on different websites as "flexitarian vegetarian" ) I've always allowed myself red meat on extremely rare occasions. Mostly, like you it's fish, poultry and dairy, I'm going to request a pot roast dinner with all the trimmings. YUMMY. Use chicken with veg cook slowly like a pot roast for other meals try looking for quorn in the super markets its vegetarian dishs ie sausages,mince, they are really nice and meat free Make the same thing minus the roast with some fake beef broth. The carrots and potatoes are the best part.
Or being you seem not to be too rigid about being veggie, if you really want the dish. Ask the butcher to cut you a roast 1/4 the normal size and double up the potatoes and carrots. It won't be veggie, but you will be greatly reducing the amount of meat and getting the exact same taste. Meg, Fish, poultry and dairy are not red meat.
Poultry is white meat, I think fish is too (It's never marketed as meat so I'm not entirely sure, but it's not red.)
red meat comes from cows, sheep, etc. Pork is also white meat.
Edit: Dairy isn't meat at all. but it is an animal product and therefore nonvegan. Robin Robertson's "The Vegetarian Meat and Potatoes Cookbook" has a vegetarian pot roast recipe that uses seitan. I have never actually tried it, and I just skimmed the recipe when I read your question, but it might work. Or you could Google "vegan pot roast" and see what pops up.
