Any vegetarian recipes for me?
I've been a vegetarian for just over two months and it's going pretty good. Do any of you know any quick, easy, and delicious recipes that I could make for myself?
I don't really know how to cook very intricate recipes. My dad usually does the cooking but I feel bad making him cook "special" food just for me...I'd rather make my own.
ps: I've vegetarian not vegan...and I don't really like tofu very much
Answers: I'm not sure what types of recipes you are wanting, so I'll stick with dinner.
-You could make some really easy veggie stir-fry by buying a bag of frozen Asian-style vegetables. Make a pot of brown rice...cook the veggies and there you go! You don't technically have to stir-fry the meal. Just serve the cooked veggies over the rice and put some soy sauce on top.
-You could also make some easy tacos/burritos by adding your favorite chopped veggies to some black beans and shredded cheese on a flour (or corn) tortilla. That only really requires chopping and heating up the black beans. (good source of protein, btw!)
-A light and easy meal is a tossed salad and a sandwich. I get mighty creative w/ my sandwiches...I use multi-grain wheat bread and pile on toppings such as tomatoes, romaine lettuce, alfalfa sprouts, cucumbers, marinated artichoke hearts, hummus, onions, red peppers, etc. Or you could have soup and sandwich, soup and salad - whatever. The combinations are fairly filling w/o being to heavy.
-Since you eat dairy, you could always do breakfast for dinner - scramble some eggs, fix some toast and have a bowl of fresh fruit.

or try
stir fry veggie noddels
fry peppers, sweetcorn ,strips of carrot(any veg you like)
with a dash of salt and pepper and soy sauce then a noddels fry for a 5 mins and dish up
if you like spicey food add a drop or two of chilli sauce or powder Morningstar Farms makes some really tasty vege patties/burgers. I like their spicy black bean burgers and their tomato & basil pizza burgers. Their vege hamburger patties are pretty good too. Cook in some olive oil and put on whole grain bread with fixings. Easy and filling. Their website also has tons of recipes, information, etc.

Mine is more like 8-9 layers because I add guacamole.

Or your dad could make the sides vegetarian, cook his meat, and you could cook a great veggie analogue. There are more out there than I can name--Amy's (www.amys.com) has a few good veggie burgers, not to mention meals, soups, snacks, pizzas, etc. Yves (www.yvesveggie.com), Lightlife (www.lightlife.com), and Tofurkey (www.tofurkey.com) make some great analogues. If you can shop online, check out www.veganstore.com and www.veganessentials.com for their vegan goodies.
And saying you don't like tofu is like saying you don't like cake flour. You have to freeze and press it to give it a good texture, and then you use seasonings to make it good. There's also tempeh, a fermented soybean cake that has a nutty, chewy texture; and there's seitan, a.k.a. wheat meat, but I strongly recommend getting high gluten flour or vital wheat gluten and making your own, as the packaged stuff sucks and is way overpriced.
