Answers: I have a great soup to share with you...
1 12 oz bag lentils
1 12 oz bag mixed beans
1/2 chopped large onion
2 carrots chopped
2 teaspoons of poultry seasoning (dunno why but I LOVE poultry seasoning with lentils)
1/2 stick butter
Soak your beans over night, then in the morning:
Add all to crock pot (4 qt) and add water til it is one inch over all your ingredients. Let simmer all day (8 hours). Source(s):
It's what I am having for dinner tonight with fresh baked corn bread! The simplest one to make for a bachelor like me...
Take any and all veggies you can think of and saute them with a small quantity of olive oil:
Brocolli
Mushrooms
Baby Corn
Yellow and Red bell peppers
Add raw veggies to them like:
Red and Green Cabbage
Carrots
Tomatoes
Salad leaves
Add some boiled potaoes and fresh cheese, and you have a salad bowl ready.
Prepare some custard ...even yogurt would do and mix any and all fruits in it...add some nuts like almonds, peanuts and cashews, raisins, etc to it.
A great meal with a great desert!!!
If you really wanna try out spicy stuff, google for Indian or Indonesian food... VEGETARIAN CHIMI CHANGAS
2 cloves garlic, chopped
10 medium mushrooms, sliced
1 large green pepper, sliced
1 medium-large onion, sliced
1 15 oz can black beans
1/2 cooked white or brown rice
1 cup mozzarella cheese, shredded
10" tortillas
cooking oil
garlic powder
black pepper
crushed red pepper
onion salt
In a frying pan saute garlic cloves, mushrooms, green peppers, onions until soft but still slightly crisp. In a bowl mix cooked rice, black beans together. In another pan heat about 1/2" inch of cooking oil. Warm the 10" tortillas in the microwave until soft. Place a 1-2 large spoonfuls of rice and beans, top with a large spoon of vegetables, and sprinkle with mozarella cheese. Season to taste with garlic powder, onion salt, crushed red pepper, and black pepper. Fold in the edges tightly, and place folded edges down in hot oil. Brown each side until golden brown. serve on a bed of lettuce and tomatoes topped with guacamole, sour cream and salsa. Very tasty!! For something quick, I make some rice, throw in some beans or lentils, and combine it with a bunch of vegetables. And spices always help, so if you can grow them, its really easy to find some oregano and basil. (Not to mention the many other delicious herbs of the world)...Herbs really boost the flavor when it comes to rice and beans-its such a staple universally!
If you can, try mint with couscous and pine nuts; you'll be begging for more, I promise. (:
Good luck! After a bit of practice, it'll be easy to find almost any dish and turn it into something vegetarian.
You can go look for Japanese food, because even if you don't eat fish, its easy to find food with enough protein and nutrients..
