Vegetarian Dinner Options, please?


We have a dinner party on Monday with one vegetarian and another who doesn't like spicy food which has stumped us as our usual vegetarian entertaining gambit is to serve curry. Any suggestions would be welcome!

Forgot to mention another guest hates coriander (cilantro to Americans) and I'm allergic to shellfish! But I think we can make a meal from your suggestions below!

This one works a treat every time - I have cooked it for over a dozen different vegetarians and they all loved it. its basically a spinach and fetta filo bake.

wash a large bag of spinach, and throw it into a pan. add salt papper, and freshly grated nutmeng. place the lid on and stir from time to time until the spinach is cooked and remove from heat.

place spinach in a clean white tea towel, and squeeze out most of the moisture. mix this with toasted pine nuts and fetta cheese.

then get some filo pastry, and brush melted butter between the layers. once you have done this for 4 layers, place the pastry in a suitable dish - like what you would use for a creme brulee. fill the cavity with the spinach mix, and fold the filo leaves in toward the centre. brush the top with butter.

you then just have to bake in a hot oven for 15-20 minutes and its done! dont serve it in the dish becuase it holds its shape - goes well with a nice tomato and herb sauce. Source(s):
TRUST ME ON THIS ONE!! You could make curry only without it being spicy . . . some Indian curries rather than red or green curry is much milder. pasta and veg with a nice sauce try anything that isnt spicy, as it can normally be accomplished, eg instead of normal lasagne try vegetarian lasagne, with vegemince or TVP (textured vegetable protein) there is so much veggie food that can be made, you just need to try not too look at just vegetables Why don't you serve pasta primavera - then you can add chicken to the non-vegetarian plates. Pasta with veggie sauces or bean based casseroles are always a good choice. Pasta with chopped mushroom and onion with a cheese sauce.
It's yummy! Why not make Spaghetti Bolognese made with Quorn Mince and then everyone will be happy. I can assure you the meat eaters will not know the difference and it is much healthier as it is low fat. I am vegetarian and use the Quorn Mince all the time, it is great. Not spicy curry, "chicken" noodle casserole, pasta with a vegie bolognese, vegie lasange, gobi, burmese curry (not hot), veggie kabobs, swiss "steak" or "b"lt's. spinach and ricotta canelloni

Hope you enjoy and have lots of fun............xxx You could serve a mild lentil and rice casserole. Milder curries are generally flavored with coconut and/or coconut milk to add a good mouthfeel. Inoffensive herbs like basil and cilantro also add flavoring. Well first pre-heat your oven to 350 deg.F.

take your vegetarian and clean them using warm water.

place your vegetarian in a a baking dish along with a handful of potatoes and onions.

place the lid on your baking dish and slide your meal into the oven to bake. it should take about 3 hours to cook up.

I like to get my vegetarians fresh! you can usually find them next to the lettuce in your local grocery stores produce Isle!

ENJOY!!! I would do a pasta with veggies. I have one that I think is really good. I use mushrooms (any), 1 yellow pepper, 1 re pepper, 1 red onion and artichokes (I use the marinaded ones in the jar). Start by using extra virgin olive oil in the pan add two three cloves of chopped garlic, butter, and your chopped red onion. Saute till the garlic and onion are softened then add the rest of the veggies. Saute these till softened. Next add a half cup of white wine and deglaze your pan. Let this simmer for a bit and reduce to make a phenomenal sauce. Add your cooked linguine and season with salt and pepper. If some of your guests still want a protein, then you could always have shrimp cocktails and stuffed mushrooms (spinach & cream cheese) for appetizers. That way your veggie friends are not left out.
