I'm finding it hard, especially in the colder weather to feel really full up on vegetarian food, but I don't want to eat meat. I also find as I get older, my body can't tolerate beans and lentils in large quantities.


Answers: My father was vegetarian and my mother couldn't be bothered to cook two dinners so we grew up vegetarian. Although I rebelled a little in my teens I 've been vegetarian ever since.

Some of the most satisfying vegetarian food I've ever cooked comes from Madhur Jaffrey's Vegetarian cook book. The southern Indians have been vegetarians far longer than the Christian version introduced into the UK in the mid 19th Century. Its different. It's not loaded with lentils either. It varies completely from standard Western fare because we tend to fall into the trap of trying to substitute the meat with another dish and then adding in the proverbial 'two veg'.

It'll help you stick to the principle!

Every now and then double fried egg and chips ~ magic!! mashed potato add onion already softened and then add spring onion, peas and sweetcorn, mix and roll into small balls whisk an egg, dip the potato into the egg and roll in bread crumbs put in fridge to cool, then fry in oil, if you eat fish add a tin of tuna and you have fish cakes. mushroom barley soup

ok, not a meal but it's goooood... Pasta with sauce is always good. idont kno what lentils are, so i odnt kno if its in there. Also, morning star has some GREAT filler up ers! :) lol Jacket potato with a tin of chopped tomatoes, spring onions and mixed herbs yum yum

brown rice, peas and curry sauce Do you like soya mince? As i use a basic shepherds pie or chilli recipe and just substitute meat for soya mince. I also add red wine to add a nice flavour when i'm browning the "mince" off with the veggies! Also have one yourself whilst cooking! Try vegetable soup (home made) with bread roll, followed by baked potato with a spot of cream cheese and a small side salad. Finish this off with a fruit smoothie (home made), followed by good coffee. A meal fit for a king. Bake a bag of frozen hash brown potatoes with a can of celery soup, 1/2 cup of sour cream and a splash of milk (you CAN use cheese if you want, but don't have to) (plus some pepper and cayenne, if you like that) for an hour at 375. On the stove, mix TVP with some corn and a little bbq sauce and when the potatoes are done, top the TVP/corn mixture with them. It's like really easy shepards' pie and so satisfying when it's cold out.

I don't really eat a lot of potatoes anymore, but last night it was cold and I'd had a bad day and it was the perfect vegetarian meal :) Chunky quorn stew
I usually put different beans in but you don't have to.
Fry up chunks of quorn with onions an garlic, add a tin of toms with veg stock and carrots and any veg you like and cook, serve with mashed spuds, my kids didn't even know it was a vegetarian meal. Go for meals with brown rice, tofu, wheat pasta, corn, tabouli salad and maybe cottage cheese.

They can be stuffed with curried rice, flavoured cous-cous,or other veg.You can always put a little cheese over the top for added flavour.
If you eat fish, try making a fish pie with mash, fish, tomatoes in layers and bake in the oven. Asda do really nice veggie meatballsand veggie sausages (they are the nicest I've tasted. If none of that appeals - a good old fashioned veggie hot-pot - just chuck everything in with a couple of veggie stock cubes and some passatta and herbs - yummy with a french stick on a chilly evening. Amy's kitchen (I think) has a lots of veggie soups that are nice and filling. Warm it up over the stove and add some faux meats or some tofu and it's fabulous! SOUPS,FRESH DIFFERENT HERBS MAKE A DIFFERENCE, TAKE SOME ROOT VEGGIES AND MAKE PUREE OUT OF THEM AND BROIL SOME SHITAKE MUSHROOM THERE SO GOOD,RICE WITH SAUTE VEGGIES IS ALSO GOOD,BUT USE DIFF RENT RICES TO CHANG THE TASTE OF YOUR FOOD LIKE BASMATI, BROWN OR THE FRAGRANT JASMINE RICE ,MAKE THE BEANS JUST TO ENHANCE THE SOUPS OR MAKE DIPS OUT OF THEM WITHA LITTLE SPICE AND INSTEAD OF MAYO USE AS A DRESSING FOR SOME SANDWICHES HOT GRILLED VEGGIE SANDWICHES ,HOPE THIS HELPS NAMASTE I'm a vegetarian, I eat mostly soy meats, ( some call them rubber meats) You can get most types in the freezer section of the grocery store. There are morning star products, worthington , and loma linda products, such as meat crumble, ( it isnt meat just a substitute for it) that you can use in spaghetti / pasta dishes instead of meat, or for sloppy joes. or soy burgers, ( sounds gross but are delicious. ) stripples, instead of bacon, little links instead of sausages.. vegetarian beans. Free of mean or meat by products. Fri- chik patties, instead of chicken for sandwiches.. egg scramblers, substitute for eggs. breakfast patties. You can also replace a variety of nuts to get proteins .
One of my favorite eay dishes, is pita pizzas, mine are made, with the pitas as the crust ( leave it closed and places the food on top of it like pizza crust) The I put vegetables such as sliced avocado, tomato, green peppers,( or the imitations meats, like the crumble,) onion or black olives. Then smother it in cheese. I use the shredded cheeses motzorella, or american. Then once you've placed everything you want on ti placed it in the oven on 350 degrees for apporx 20 mintues. If you want the crust crispy then preheat it in the oven while you slice the vegetables or toppings, at least 10 mins
Another meal I make a lot is shepards pie. It consists of a soy meat , like the crumble or fri chik, or prime stakes cut up. you put those on the bottom of the pan, then place some corn or peas or mixed veggies on that first layer, then you top it off with mashed potatoes, spread the potatoes around to the thickness you like. Once you've got the toppoing of the mashed potatoes on it then cook it in the oven for about 20 mins or until the potatoes are lightly tanned or crisp on top depending on how you'd like it.
There are so many others I make as well as this.
You can find out more by visiting a local health food store. They have canned veggie meat like big franks instead of hot dogs, frozen slices for sandwiches. They also have free magazines there , sich as delicious, or health, and green earth.
