Slainté (to your health) Idon't think it would be toxic..but i kno for sure that Rabbits looove it i dont think it is toxic,but i think we choose not to eat it because it is too hard to digest or somewhere around there. Animals like horses eat the whole thing. If they were toxic I'd be dead now, does that help<G>?

Seriously though, they aren't especially tasty, but they're something interesting to mince into salads or soups. Carrots are part of the same general family that includes parsley, fennel, cilantro, celery etc. so they should be loaded with good nutrition but I've never bothered to see if anyone's ever analyzed them. Just as a guess; I'd suppose they'd be closest to parsley in that aspect. Yes, I've seen them used in recipes and on tv cooking shows. I believe you can juice them as well.
