Tube of Polenta?

Answers: Lots of things!
Make a polenta lasagna. Slice the polenta into discs and layer them as you would lasagna noodles.
Make polenta parmesean. Slice the polenta into discs and drop in an egg wash and then bread with italian crumbs. Pan fry in a bit of olive oil. Place the fried discs into a shallow baking dish, top with just a touch of pasta sauce (maybe a tablespoon or two) onto each one and top with parmesean cheese. run under the broiler for just a moment to melt the cheese. YUMMY.
Make polenta fries. Cut the polenta in half, then lengthways into sticks. drop into deep fat and fry like french fries.
Make polenta grits. Mash the polenta into a saucepan, add a bit of half and half, some cheese of your choice ( a good melty one), add spices of your choice....heat and serve.
These are the things that I can think of off the top of my head. Be sure to check out the foodtv website and enter polenta in the search engine. eat it LOL this is funny! Why did you buy it if you didn't know what to do with it? Just kidding, I do that too sometimes. Martha Stewart has a lot of recipes for polenta, I didn't check all of them so you may have to make some substitutions so it's vegetarian or vegan. http://www.marthastewart.com/portal/site... Here some recipes from the pre-cooked Polenta I buy all the time

Slainté (to your health) I have a really simple recipe...here it goes:
Herb-Crusted Polenta Rounds
Olive oil cooking spray
16-ounce tube prepared polenta, sliced into 1/2-inch thick rounds
Salt and ground black pepper
1/2 cup minced fresh herbs
Oil grill or saute pan on medium-high heat.
Season polenta with salt and pepper. Arrange polenta rounds in pan. Cook 7 to 10 minutes, turning once, until polenta rounds are golden brown and heated through.
Sprinkle with fresh herbs and serve.
You can serve this with a salad tossed with some pre-marinated tempeh and goddess dressing perhaps.
Happy cooking! :-)
