Help with veggie burger recipe...?


I have a recipe for veggie burgers that calls for a can of romano or white kidney beans, neither of which I was able to find at the grocery store... What can I use in their place?

Vegetable Veggie Burgers

INGREDIENTS:
3 tbsp olive oil
1/2 cup corn kernels
7 mushrooms, diced
3 scallions (green onions) diced
1/2 red bell pepper, diced
2 cloves garlic, minced
1 tsp cumin
1 carrot, grated
1 small potato, grated
1/4 cup silken (soft) tofu
salt and pepper to taste
1/2 cup bread crumbs

PREPARATION:
In a blender or food processor, process tofu until creamy and set aside.
Sautee the corn, mushrooms, scallions and bell pepper in one tablespoon of oil for 3 to 5 minutes. Add the garlic and cumin and cook for one more minute.
Remove from heat and add the carrot, potato, tofu, salt and pepper.

Add bread crumbs until the mixture holds together. You may need a little bit more or less than a half a cup.
Shape the mixture into patties and refrigerate for at least one hour.

Heat remaining two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side.



Mushroom Veggie Burger

INGREDIENTS:
2 tbsp vegetable oil
1 onion, diced
1 clove garlic, minced
3 green onions, diced
1/2 tsp cumin
3/4 cup diced fresh mushrooms
1 15 ounce can pinto beans
1 tsp parsley
salt and pepper to taste
oil for frying

PREPARATION:
Sautee the onions and garlic in olive oil for 3 to 5 minutes, until onions are soft. Add the green onions, cumin and mushrooms and cook for another 5 minutes, until mushrooms are cooked. Set aside.
Mash the beans with a fork or a potato masher, or process in a food processor until well mashed.
Add the mushrooms to the beans and add parsley, salt and pepper. Stir until well combined.

Shape the mixture into patties. Heat about two tablespoons of olive oil and cook each patty until the veggie burgers are done, about 3 minutes on each side. possible black beans could be used The starch in the beans will help hold the burgers together. Any bean you like will do. Another white bean is called the Great Northern. Lean ground beef is good. Use any kind of bean...i love black beans in anything
