seriously...... With extra firm tofu, I put the whole package in the freezer for at least 24 hours. Then I thaw it and put it between two cutting boards to squeeze out as much liquid as possible. I marinate it overnight in whatever -- garlic juice, bbq sauce, soy sauce, sweet & sour -- and grill, broil, or skillet fry "cutlets" or "fingers" of tofu. Or cut it into cubes and use it in kebobs. The pre-freeze gives it a firmer, meatier texture.

With silken tofu (the mushy opposite of firm), I use it in the blender to thicken soups, salad dressings, and sauces. It can be used to "stretch" and add protein to smoothies, instead of yogurt. It can be beaten in with eggs to stretch an omelette. If you only add a little, no one will ever notice.

Easy creamy italian dressing. In blender, puree together
One pkg of soft or silken tofu
Vinegar, oil, and seasonings to taste
After blending, stir in some parsley or oregano and other chopped herbs for looks. (optional). through that stuff in the trash and get a porterhouse steak and then hot fudge sundaes Blend soft tofu in the blender with carob powder or raw chocolate powder and some agave nectar to sweeten.

Voila . . . pudding!
