Sunrise, you are funny! I don't eat carrots, i don't like then, but I drink at least 6 of them per day, lol! How about leek and potato soup?

Bunch of leeks washed and chopped
750 grams small potatoes washed and chopped (keep skins on)

Sweat together in a pan with small amount of olive oil until potatoes are tender - about 15 minutes.
Add vegetable stock powder to taste (about 2 tsp), water to cover and simmer for about 10 minutes.
Remove from heat and blend to chunky consistency using stick blender.
Add vegan single cream (I use Alpro) to desired thickness.
Reheat without boiling.

Serve with or without wholegrain bread. No meat, no beans, no grains... here's a recipe:

Eat a carrot. A potatoe.

Stop being such a wosse and eat a balanced diet, go and get a full English from the greasy spoon with extra Black pudding. There are loads of things you can fix. Here's one of my favourites:

Butternut squash and spinach soup.

Cut squash in half and scoop out the seeds. Brush with oil and sprinkle with salt and pepper. Bake in a medium oven for an hour or so until soft and cooked through. Put aside to cool while you do the next bit.

Heat a good splash of olive oil in a deep pan, add two finely choppped cloves of garlic and saute for a minute or two. Do not let the garlic brown. Add a couple of peeled and diced potatoes and cook for another minute or two. Add a pound or so of spinach (if using mature spinach be sure to wash thoroughly and tear out the tough stalk) and wilt in the pan. You might need to put the lid on for a bit. When the spinach is nicely wilted add stock (probably about a litre, but judge it for yourself) and cook until the potatoes are breaking up soft.

Finally, scoop the cooked butternut squash out of it's skins which should have loosened off and add to the soup pan. Blitz the whole lot in the blender and enjoy!!

You might want to put some toasted seeds on top for a bit of crunch. A vegetable stir fry is one alternative or a vegetable casserole using fresh seasonal veg.
I am wondering why you are restricting yourself to such a restrictive diet.
A vegan diet is fine if you eat a variety of foods such as nuts, pulses and grains. Cut these out and you are losing valuable sources of minerals, vitamins and protein.
I bet you feel tired, irritable and hungry all the time. A diet like this will starve you.
