Vegan soup recipes?


Does anyone know of any nice vegan soup recipes,using no soya products either.


Answers: How about carrot and butterbean or onion.http://www.veganfamily.co.uk/carrotbean.... If you like spicy soup this is one that my friend and I came up with:

3 cups organic vegetable stock
3 cups distilled water
2 TBS sea salt
2 tsp cayenne ppr
.5 diced habanero pepper
1/2 cup chopped onion
2 cups diced tomatos
1 cup julienned carrots
1 cup sliced celery
4 diced potatoes
2 cups corn

in a large pot combine, stock, water, sea salt, cayenne,habanero, potatoes, celery and onions and simmer on low-medium heat for about 10 minutes. Then add the remaining ingredients and raise heat to med-high for about 15-20 minutes. Remove from heat and let cool a few minutes and serve!

Ingredients

* 1 onion, chopped
* 2 cloves garlic, minced
* 1 inch ginger, minced, to taste
* 1 tbsp extra virgin olive oil
* 1 potato, chopped (optional)
* 2 ribs celery, chopped (optional)
* 3 carrots, cut in chunks
* 1 quart vegetable broth, or to desired thickness
* 1 tsp coriander (optional)
* 1 bay leaf
* Salt and pepper, to taste

Saute onion, garlic, ginger, and oil together in a large saucepan on high heat until onions are translucent. Add potatoes, celery, and carrots. Add broth and spices and bring to a boil. Lower heat and cook until carrots are soft.

Remove the bay leaf and then puree soup in a blender. Do this in batches, never filling the blender more than half full. Taste and season as desired. Enjoy!

Tips
You do not need to use precision when adding and measuring ingredients in this recipe. It is okay to use more or less carrots, broth, spices, or other veggies than called for in the recipe.

Try adding other herbs and spices. For example, try adding lavender.

To add citrus tones to your soup, squeeze in a bit of lemon juice or add some grated citrus peel.

Make your soup creamier by adding a splash of skim milk or rice milk right before serving it. Red lentil and vegetable!
I put it on the menu at work Most vegetable soup recipes follow the same theme - cook the vegetables in stock then blend if required. Try:

Beetroot and parsnip
Ministrone (made with vegetable stock)
Broccoli
Butternut squash... actually the list is limited only by imagination... Lentil soup.

Fry some onion or leek in olive oil or organic sunflower oil spread until soft. Add some carrots and then the lentils. Add vegetable stock. Bring to the boil and simmer for half an hour. You could add some yeast extract for the B12 if you like the taste of Marmite. Season to taste. Yum. Take one vegan. Push as much as you can into a food processor with a little water and blitz down to a liquid.
Reduce this down on the stove until you get the required consistancy. Season to taste. Try not to add too much salt. Vegans can be quite bitter so taste as you go.
