I need an easy, vegan, meal recipie. I am entertaining guests who are vegans and I want to serve something tastey they can eat. I like all veggies just about, I'm not picky.

Just to clarify... Vegans don't eat ANY meat - cow, chicken, fish.......
They also stay away from any animal products - milk, eggs, butter, yogurt (Dairy), and any products that contain animal fats (many so called "soy" dairy products have a small disclaimer on them stating that they use milk protien and milk sugar (lactose) in the product making it no longer Vegan friendly..)

dates, figs, pomegranate, persimmons
a red cabbage salad, shredded very fine and long, along with shredded carrots, flaxseed oil and a bit of salt, apple cider vinegar optional
a tofu soup with sea weed and vegetables, dice tofu, brown tofu, add ginger, garlic, soy sauce, rice wine, water, nori, cabbage, onions together and simmer until cooked. garnish with scallions.
a coconut milk curry with pumpkins (and red squash optional) and onions (pearl onions) plus raisins and herbs and spices served over brown rice, with added jasmine essence. garnish with scallions. use a bit of white wine in this, and ginger, add thyme and oregano. also, recipes on the web.
also, yams and sweet potatoes are so yummy for the main course or as a sweet side (add a bit of vanilla, dark brown sugar, cinnamon, nutmeg).
potato or cauliflower gratin, roasted asparagus and roasted vegetables, roasted nuts, almonds, garlic
a bunch of greens, such as beet greens, chard, kale, dandelion leaves, spinach, etc, sauteed, served with homemade pasta (use spinach) and tossed in a pesto, basil, garlic, pinenuts, vegan cheese, olive oil
poached pears served over soy or rice ice cream, drizzle with a simple syrup of flower essence or add lavender into the ice cream, use white wine as the base of the simple syrup and also add grapes and vanilla.
also, serve some nice table grapes, such as concord or champagne grapes.
ohh! another nice cake recipe, lavender (chopped lavender or lavender essence) and grapefruit (zest) cake with half dark brown sugar, half light sugar. use egg substitute, almond milk, vegan shortening (recipes online), vanilla
roasted chestnuts, umm also, a soup with a base of mere poix (carrots celery onions), add wine, water, and veggies such as tomatoes, some beans. also love :)
arugula and baby spinach (and baby greens and frisse) makes nice entertaining salads. herbs such as basil and oregano and thyme makes everything better.
corn and apples are in season, so grill or roast fresh corn, or make a corn meal or corn soup, fresh tortillas to serve with vegetables, also cornbread or muffins. with apples, make apple sauce, apple bake(crumble), quite easy, stew the apples in apple cider, some honey, dark brown sugar, cinnamon, nutmeg, and get some ginger and candied fruits and mix in a vegan pie crust batter with molasses or dark brown sugar and bake, apples on bottom, crust on top.
plantain chips, banana chips, beet chips, root veggie chips, also guacamole and dips such as spinach and hummus are classic party foods.
carrots and pumpkins go well together. barley and mushroom risotto. also you could serve olives.
you are able to do more with less with smart pairings of compatible foods (such as basil and tomato) accompanied with spices, herbs, or fragrant oils.

How about fish, shrimp and there are soy products that are really good you could use as a substitute for meats and chicken I always find stir-fry's to be a good meal because it's simple to cook and you can easily add meat for the meateaters. Just try and add as many fresh vegs as possible and then fry in a bit of soy sauce and sesame oil. To make it interesting you could put chunks of fake chicken in but if you add things like cashew nuts, tofu and sesame seeds then it would be better without. I usually serve it with brown rice but the meat-eaters may prefere white so go with that.
Or you could make a sausage pie? Some vegan sausages are really tasty... my dad can't tell the difference between some vegan ones and real meat. So par boil some veggies (potatoes, carrots, brocolli) and then put them in a dish with other vegs such as peas onions etc. Then cook the sausages, slice them and put them in the dish. I usually then make a thick stock or get bisto gravy (yes, it's vegan!) and pour it over. Then I put 'jus roll' ready made pastry over the top.
If you're serving bread then give your vegan friend some olive oil to use instead of butter or you can buy vegan margerine for less than a pound from most big supermarkets.

Get Earth Balance margarine if you're serving bread or to cook with. You can use soy milk in equal proportions to cows' milk in any recipe. If your recipe calls for cheese, look for Follow Your Heart by Vegan Gourmet. I don't like it on pizzas, but it's pretty good when mixed in a casserole.
Find eggless spaghetti or pasta, heat up some jarred marinara sauce (Amy's has a few good vegan varieties). You can buy Tofurkey sausage (they have an Italian style), pan fry, and serve with the pasta. Serve with steamed veggies or a big luscious salad. In this case, olive oil and black pepper would be delightful if you're serving bread.
Nutritional yeast is good when sprinkled over pasta--it gives a cheesy flavor without the animal products. Most natural foods stores sell it, but don't worry if you can't find it. last night i made rice with stir-fryed vegetables and fake chicken.
it was really good and fast.

you can probably find whatever you need to substitute for in your regular recipes.
