I am poor and need fast recipes that are cheap but healthy.
P.S. No tofu, please.
Answers: I love making Jumbalaya. You can buy a box of Jumbalaya mix for about a dollar, and the possibilities are pretty much endless. I fix it when I want to clean out my fridge of vegetables that might go bad. You can put pretty much anything you want into the rice mix, and there's little you have to do. Just get it to boil, then turn the heat down, cover and simmer for 20-25 minutes.
Easy as can be, and packed full of flavor. Kind of spicy, too.
