Vegan potato salad?!

Vegan potato salad?


I have two large-ish potatoes, but what I'm making for dinner only calls for half a potato. I don't want to waste anything, so I thought I'd made a small batch of potato salad. However, I don't have any ingredients. Does anyone know how I can make a vegan mayonnaise-like sauce with these things:
flour, corn starch, vinegar, veg. oil, (vegan) crisco, brown mustard, Italian dressing, (vegan) margarine, salt and various seasonings, sugar, um....I guess that's it....I don't know what's involved. I've made a sauce for macaroni salad that's mostly vingear, maragarine and Italian dressing, but I think for potato salad it's supposed to be a bit creamier, right? Any advice would be appreciated.

I appreciate the suggestions I've been getting, and those will be great ideas next time I go out to the grocery store. However, I'm just looking for something I can improvise for tonight with the ingredients I have at home. If I had veganaise, I would certainly use that. I'm working with limited resources, though, and was hoping someone knew of something I could improvise.

I don't give direct recipes in Yahoo Answers anymore since they get stolen by 'pay per view' websites; but you *can* make a creamy style sauce for potato salad with what you've got on hand.

You'd need to start out by mixing some of your flour and cornstarch in water and cooking that into a thick white 'gravy', whisk in some vinegar and oil once the 'gravy' begins to thicken. An immersion blender would come in handy for emulsifying the oil but a hand whisk will do, just be careful not to break the sauce!

Since you want to use this for potato salad you'd obviously want sugar and salt in your sauce along with mayhaps a dash of the brown mustard and whatever other 'potato saladish' seasonings you have on hand. Source(s):

INGREDIENTS:
1/4 cup lemon juice
1/2 cup soy milk
1/4 tsp salt
1 tsp Dijon mustard
6 tbsp vegetable oil
1/3 cup chopped fresh basil
dash cayenne
PREPARATION:
Put all the ingredients except the oil in a blender or food processor and process on low speed.
Gradually add the oil a few drops at a time until the mixture thickens. Continue blending until smooth and creamy.
