Anybody have a vegan cherry cake recipe?!?!

Makes one 9 inch round cake.

This moist little cake is loaded with cinnamon and cherries, and has a caramel undertone from the brown rice syrup. If you glaze it with jam, it’s downright fancy.

1/2 cup whole wheat pastry flour

3/4 cup unbleached flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 tablespoon cinnamon

1/4 teaspoon salt

1 tablespoon ground flax seeds

6 tablespoons silk creamer or soymilk

1/2 cup canola oil

1/4 cup brown rice syrup

1/2 cup maple syrup

1 large lemon zested

1/2 cup dried, unsweetened cherries

Preheat oven to 350 degrees. Oil a 9-inch round cake pan. In a large bowl, mix the flours, baking powder and soda, cinnamon and salt. In a cup, stir the flax and soymilk to combine. In a medium bowl, whisk the oil, brown rice syrup, maple and lemon zest. Whisk in the soymilk mixture, and stir it all into the flour mixture. Scrape into prepared pan and bake for 35 minutes, or until a toothpick comes out with only large moist crumbs attached.

Cool on a rack. If desired, glaze the cooled cake with all-fruit cherry preserves.

Sure, grind up two vegans. Three if feeding a larger group. Add a little flour and mix it with lard. You need to add the lard because the vegan is too lean. Throw two eggs into the mix and beat on high for three minutes. Since vegans all stick together, you may have to scrape the bowl to get the mix out. Place in the oven until the cake can stand for something worthwhile. When helI freezes over and this finally happens, add cherries.
