Vegetarian or Vegan Recipies?!


Question: I'm just about the pickiest eater on planet earth. I love sweets and junk food, and dislike the taste of many veggies, so not eating meat really makes it hard for me to just eat healthy,

so although im forcing myself to just eat foods i hate the taste of, I'd really like to know if anyone has good vegan or vegetarian snacks, or meal ideas that someone like me could eat on a regular basis?

Also, do you think it's possible to use Boca burgars to substitue into hamburger helper? ... I know if I could make that, I'd eat it all the time to get the protein I need.

i have actually used boca crumbles in place of ground meat in hamburger helper. that's when i found out that i really don't like hamburger helper.

there are tons of vegetarian convenience foods, but you really need to be mindful of what you're eating. it sounds like the diet you're currently following is not very healthful...

you can get protein from tons of different sources. beans, cheese (in moderation), dairy products if you go that route, soy, meat replacements...

your first step should be to pick up a few veggie children and teen cookbooks (they're always full of snack recipes and ideas and are usually fairly simple to make). you can also check out recipe websites for ideas. and go to the health food store. if you're lucky enough to have one with a deli (we actually have that here in suburban PA), you can probably talk someone into letting you try things before you buy them. or if you have any vegetarian friends, ask them if they're willing to cook for you. i do it all the time for my friends out here (vegetarian and not) because i'm a mom and i'm used to cooking more than i'll use. if you're ever my way, let me know and you should stop by for dinner...

  • Absolutely, use crumbled Boca burgers (or the fake Boca ground beef crumbles) with hamburger helper.

    Beans and brown rice are another classic way to get complete protein.

    I like raisins, apple sauce, soy cheese slices, ``soy crisps` (like rice cakes but with soy), protein bars, grapes, carrots and dip, or instant oatmeal for more-or-less healthy snacks.
    You can substitute boca in anything. I do.

    Also if you go to vegweb.com you will find a lot of good ideas for meals.

    newsflash, meat isnt healthy and not eating meat isnt to blame for not eating healthy.

    also, I really wish people would stop saying 'complete protein' its a myth!

    Im all for eating well rounded meals... but seriously there is no science behind the complete protein myth, the statement was retracted right after the book was released!
    Try our family favourite - New Orleans Beans & Rice: Fry a large chopped onion in some olive oil and when it gets a glassy appearance, add 2 finely chopped garlic cloves, half teaspoon turmeric, 1 tsp cumin, 1 and a half tsp ground coriander seed and stir until fragrant. Add 2 cups of boiling water, 1 bay leaf, 2 chopped celery stalks, 2 sliced carrots and 2 tins of red kidney beans (drain first). Simmer until the carrots are soft and then add 3 tablespoons Tamari soy sauce, 1 tin refried beans, freshly ground black pepper and ground dried chilli to taste (I use a quarter teaspoonful). Stir until it starts to simmer, then serve over brown rice. This recipe makes about 5 portions and it freezes well. Even non-vegetarians love it!
    A lot of people who dislike vegetables have never had them cooked properly. An overcooked or badly seasoned vegetable can put you off that food for a long time. My palate changed after I went veg, and I learned to like asparagus and tolerate cauliflower (but not brocolli, sorry). Your palate will probably change, and you'll learn to cook vegetables correctly and enjoy them.
