Peppers are great to freeze. And can be used in soups all winter long.....
Also corn-on-cob, green beans, carrots, onions, and even tomatoes (cut up or crushed, and if used not to long from time of freezing).......
peppers corn, carrots, green beans, Lima beans, and peas.
Lentils. I make lentil soups and curries all the time and they are excellent to freeze. They lose none of the texture or taste upon defrosting. So easy to cook with and great on the waist line and on the budget.
