How a vegan or vegetarian diet may be the solution for people with severe food allergies because of the cross reactivity of some foods. It could save lives. Look up 'cross reactivity' on the internet. Very interesting subject.
Health benefits (Low cholesterol, healthy BMI, low blood pressure, lower heart disease, lower cancer rates, improved digestion).

How vegetarians stay healthy without meat: meat gives you omega 3s, protein, B12, and iron are the most important. Research how vegetarians obtain these nutrients from other foods.

Vegetarianism and how it relates to religion. Christianity and Judaism teaches that animals must be clean and treated in a humane manner. Slaughter houses are usually very cruel and unclean. There are also other laws in these religions which make it difficult sometimes to eat meat. For example, you are not supposed to mix dairy with meat (cooking a calf in her mother's milk- you can find this in exodus). You can not even use the same utensils on meat and dairy, so you have to have seperate dishes, seperate places entirely to store meat and dairy, seperate utensils stored in seperate places. Things like that. It's just easier to not eat meat.

Buddhism teaches that eating animals is wrong.

You can also write about how some vegetarians do not eat meat, because of environmental reasons such as green house gas emissions.

How vegans have adapted a watered down definition of veganism compared to it's founder's standards. Write a nice paper on how veganism is dictated by convenience. If it's convenient than it's vegan, if it's not then screw it, we can do it and still be vegans and hell to anybody who says we aren't!!
