Vegan Cheese Sauce
prep time: 5 minutes | cooking time: 5 minutes | makes 2+ cups
This recipe is an amazing alternative to all sorts of traditional cheese sauces. Use less water for a nacho cheese or use a little more water for a macaroni and cheese style sauce. Adding extra margarine will make it creamier. Great over steamed vegetables, mashed potatoes, in burritos, on veggie burgers, and the list goes on!
Equipment:
Sauce pan
Ingredients
1/2 cup unbleached flour
1/2 cup nutritional yeast
1 1/2 - 2 cups water
2 tbs soy margarine
1 tbs yellow mustard
garlic salt to taste
Additional spices can and should be added at your discretion. Yummy add-ins are curry powder, turmeric, red pepper, powdered mustard, cumin, etc.
Directions
Mix flour and nutritional yeast in saucepan. Add enough water to form a thin paste and mix thouroughly to avoid any dry pockets. Add the rest of the water and turn on heat to medium. Stir continually until sauce reaches desired consistancy. Remove from heat and stir in margarine. Add yellow mustard, garlic salt, and any other spices you wish.
Try using Soya milk equivalent and vegan cheese.
I am not vegan so I don't really know how the above ingredients would work, but I would give it a try.
Top it with tomatoes.
Soya Cheese with a little Tofu add a little nutmeg to bring out the taste add in a little cooking oil or vegetable margerine mix all that together and use with macaroni. Have extra of the mixture in squeeze bottles just label it veggie cheese!
(I'm not a vegan but I'm nearly a vegan. I just eat the occasional egg and occasional dairy milk but usually eat fake eggs and drink soya or coconut milk!
The problem is that vegan cheese is pure crap. If you've eaten regular mac 'n cheese, you are going to hurl if you make it with vegan cheese.

I made that recipe the other night and added chunks of steamed broccoli and slices of roma tomatoes. My son and husband devoured the whole thing.
If you have a health food store near you, try Vegan Gourmet nacho flavored cheese. Just melt it and add a little plain soy milk or water. Best mac n' cheese sub from a store-bought product.
