Too much soy has very negative effects. You have to see a nutritionist to help you come up with a balanced diet for yourself. You've got a tough one but it can be done with professional help.
Tofu! Soy! Popular for vegans and can be made in thousands of ways. It's also really yummy. You can also do a lot with greens like broccoli, peas, green beans, and other really delicious veggies. My mom was vegan for 90% of my life, so i grew up eating mostly vegan food. Recepies are easy to find online, and veggies are sold in every market (except the butcher) are healthy, and taste great. You can also find imitation meat, although some people are repulsed by the idea. Personally, i think it's not bad at all. Good luck sir!!!
Get yourself a Vegan and marinate in cold beer for 2 days.
Strap the limbs of the vegan like a chicken and roast in an enclosed vessel at medium temp for 4 hours. Drain all of the fluids into a warm bowl and enjoy.
A quick check on Google yielded the following:

Amazon has tons of gluten-free cookbooks. You're sure to find one that has vegan recipes--like this one: http://www.amazon.com/Gluten-Free-Vegan-...

Good luck!
