If you freeze and press tofu, its soaks up stuff like a sponge! Freezing it for at least 24 hours will change the texture. You can even store tofu in the freezer, as it will be good for months.

The best way to make tofu for stir fry that I've found is to make a really strong, flavorful sauce for it (allrecipes.com has a good hot and spicy tofu recipe, or soy sauce also works). Chop the tofu into small (1" cubes). Marinade it overnight, then throw out the sauce (it gets watery). Make new sauce. Stir fry the tofu in a non-stick pan (it has to be non-stick, or else the flavorful cooked parts stick to the bottom instead of the cubes). It is done when it looks burned (dark brown). At least, that's how I like it.
If you go to a Vietnamese or Chinese store that sells tofu, you can get it in various ways. I usually go to the Oriental store down the street and buy the hard tofu and use it for stir-fry. They sell tofu in various thicknesses and hardness for different foods. You can also get good ideas on how to prepare it while you are there.
