Veg dinner for tonight?!
Answers: I need a tasty vegitarian dinner for tonight that is not to exotic and not to expensive. Any ideas? (please really veg and don't try to convince me not to!)
Veggie pizza
Ratatouille is a great veggie dinner with jacket potatoes yum yum
I usually do tacos or hamburger helper made with veggies crumblers, but you could do veggie lagsana, homemade marinara sauce over cheese ravioli (yum!).
get some tortillas and a can of refried fat free beans. Heat up the beans, mix with onion, garlic, heat tortillas. Easy bean burrito, fast and cheap.
Black bean tacos are delicious and easy.
Get a can of black beans, drain them, then prepare them with a taco seasoning mix as directed. (Use a bit of water, the seasoning and let simmer for 10 minutes or so.) Then add to tortillas with all your favorite taco toppings - tomatoes, lettuce, olives, cheese, etc.
This works well because a can of black beans is the same as a pound of beef (16 oz.)
roast a squash (your choice but acorn is my fave)
then stuff with a rice pilaf or wild rice mix and sauteed zucchini, mushrooms, red onions and asparagus.
Yummy and very seasonal!
slice up the veggies you have, doesn't matter what they are and cook them about ten minutes in your fry pan with a little oill, just enough to keep them from sticking to the pan. Then add some soy sauce and cook them a few more minutes, stir now and then. use soy sauce to taste.
Pasta is always the best option.
chop up some red and yellow peppers, a red onion and a courgette and lightly fry them to make them a little softer, then add to the pan a can of ratatoulie and a carton of passat, salt and pepper and a dash of white wine.
Cook off the pasta and serve with the sauce and a nice cheese!
Vegetarian fajitas!
They're my favorite to make, they're quick, and they're filling.
You will need:
Three peppers of your choice
An Onion
A box of Goya Black Bean Rice
3 garlic cloves
Package of Ortego (Or your favorite) of fajita seasoning
Sour cream
Soft shell tortillas
Cut the seeds out of the peppers, cut them into slices, and put them in a pan with some oil, along with diced onions and diced garlic. Fry until fragret, then add the seasoning with whatever amount of water it calls for.
On the side, make the rice in a pan, which may take 20 minutes. If you don't like rice, or can't find Goya products, put in Portabella mushrooms instead, slicing them with the rest of the veggies.
The rest is the same as making normal fajitas.

Black bean burritos
Easy, cheap and quick
Can of black beans in pan with a bit of water (so it doesn't burn - no need to add the fat with oil) - add onion, celery and taco seasoning (or make up you're own taco seasoning using chile powder, cumin, garlic ....)
Chop up tomatoes, lettuce and whatever else you like on taco shells - I like black olives, salsa, shredded cheese, and sour cream also
put bean mixture in bottom, and toppings on top, and eat - yummy!

You can always make an Asian stirfry!
They have packets of seasonings you can buy that are only maybe a buck or a little more....sautee all the veggies together and serve over rice. yummy.
my daughter likes veggie burritos. They're make with cilantro lime rice , pinto beans , lettuce , tomatoes , onions and lots of hot taco sauce. She sometimes will fry a veggie burger with taco seasoning and add that to it .
Yves makes veggie crumbles with taco seasoning. Cut up some tomatoes, shred some lettuce, shred some soy cheese, cut up whatever veggies, get some taco shells, and you have taco night!
