Vegan Macaroni Casserole?!


Question: I'm making a casserole and I need some help. It's going to be kind of like macaroni salad. So far it includes macaroni; bacon bits (yes, these are vegan); green peppers; Italian dressing. Any other ideas of things I can add to it? As for a topping, I thought I would make some garlic bread and cut it into cubes and sprinkle it over the top. Yes/no? My biggest challenge seems to be the lack of cheese (but please don't suggest soy cheese because I'm not going out to the store again and I don't have any at home).

how bout some broccoli bits? and/or cauliflower...
you could add some paprika

Vegan Cheesy Macaroni Casserole
INGREDIENTS:
1/2 cup nutritional yeast
1/3 cup flour
1 cup vegetable broth
1 1/2 cups water
1 1/2 tbsp soy sauce
1/2 tsp garlic powder
1/4 tsp paprika
1/4 tsp dried basil
1/4 tsp oregano
1 4 ounce can tomato sauce
2 cups macaroni, cooked
PREPARATION:
Pre-heat the oven to 350 degrees.
Combine the nutritional yeast and the flour in a saucepan. Place the mixture over low heat, stirring until lightly toasted. Slowly add the broth, stirring to make a thick batter.

Garlic Bread idea is good and Maybe add some sauteed Onion,Mushrooms and Tomatoes to it.

You could try adding sliced mushrooms,green and yellow squash,grape tomatoes,for a real 'colorburst'.

The garlic bread cubes sound good,try sprinkling some fresh parmesan on top for an added kick.

You could add some slivered almonds, diced tomatoes, and black olives. I don't know about the garlic bread, wouldn't it be too "squishy"? Maybe if you toasted it first, to make it crunchy.

Chopped tomato, diced onion, bits of brocolli, some julienned carrot. I would just eat the bread on the side, and not put it on the salad.

i wouldn't consider that vegan.. sorry.

noodles are highly questionable... all processed foods are questionable.

along with the dressing.
