There's this brand, Amy's that makes incredible vegan organic soup. I love it. I'm not much a cook, so a can of soup in the pot is pretty much as far as I get.
Miso soup (this is like chicken soup for the vegan soul):
Heat a litre of water in a pot. When it boils, turn off the heat, stir in 2-3 tablespoons of miso (available from Asian supermarkets), thinly sliced dried seaweed (optional), sliced spring onion and 1cm chunks of raw tofu. You can experiment with other vegetables; the trick is to cut them really small so they blanch quickly.
Butternut soup:
Fry 2 onions. Add chunks of butternut. Just cover with water. Add stock powder or yeast extract. Boil until butternut is soft. Liquidise, and stir in half a cup of soya milk and some lemon zest.
Lentil soup:
Fry an onion with any vegetables you have (carrots, celery and/or spinach work well). Add 250g brown lentils, a tin of tomato and some spices (coriander, cumin, turmeric, origanum, or whatever you feel like), and cook for a few minutes. Add vegetable stock and half a glass of wine. Simmer until lentils are soft. Liquidise, or serve chunky with pita bread triangles.
