Answers: I have been hearing about this buzz about almond milk...I hear it's a good lower calorie substitute for regular milk.

I like the vanilla almond milk, to me the plain almond milk is not as good (mainly like almonds in water form), but I like vanilla.
to be exact,it taste like a combination of both milk and almond. usually,i'll boil the milk and the almond( roast it for stronger taste) and chill it overnight. well,if you're lactose intolerance simply boil the almond and remove the skin before you blend it and strain the juice; like the peoples in middle east prepared it traditionally..but,it sure used up lots of almond huh?
it's okay, the one i tried was kind of too bland for me though, i prefer soy milk
I am a former chef and a diabetic/vegetarian, I use ground alomnds to make mine and some Hispanic store have almond flour, you make it like rice milk or Horchata in Mexico.
It is best to bil the water and then add the almond meal or flour or both cook it for a few minutes and then let it cool (you can do this for rice milk to, I use rice flour and some rice ground in a food proceesor, you can grind almond to this way).
Once it has cooled the sweetening or not is an otion, for me I use honey or a natural cane extract, it is up to you, and you also can flavour it with fruits, chocolate/cocoa/carob, vanilla or even coffee.
The taste is very pleasant and is nice on cereal, in cooking, just make sure to boil it, in desserts, a nice rice pudding made from it is one of my favorites.
