Slap-dash Veggie Recipes???!


Question: Everyone has a meal or two that they whip together when it's just them, they have no time, or they feel lazy. Mine is a taco salad with soy crumbles.

So basically, I want you to tell me what you whip up when you have no energy or time - the most unfancy, simple meals you know.

1. Mini-pizzas English muffin and cheese on top for me. (could put crumbles in it to to make a "meat" sauce.
2. Ready-made salads that I only have pour my Italian herb vinaigrette on.
3. Wraps - my fav with different things inside. Veggie crumbles, with pesto and peppers, onions, sour cream and cheese for example. Sometimes fresh veggies, sometimes cooked in the veggie steamer (link below)
4. Pasta Something. I make the sauce: Pesto, butter and black pepper, garlic and herbs cream sauce, primavera, tomato-basil pesto, marinara sauce, marsala sauce. Then I mix in my favorite veggies. that I put in the steamer while assembling the sauce.

** I often freeze my sauces and pre-cut my veggies to be kept in the fridge or freezer btw. Then all I have to do is micro the sauce and boil pasta and steam the veggies up, assemble and dinner is done in 15-20 minutes. It's a time saver and food saving technique. You could even freeze your sauces in ice cube trays to have individual servings already available. I sometimes keep the cubes in a butter tub in the freezer. **

If I'm really hungry (no lunch or something) I'll munch on hummus and carrots or sunflower seeds whilst cooking sometimes :D

mostly... PB&J, hummus on peta bread with fresh tomatoes and letus inside ( with a little EVOO and salt/pepper ), aand fruit salad with a hand full of some kind of nut on the side for protien. :)

A bowl of chick peas and an apple. lol

Firm tofu.
Can of tomatoes.
Salt, pepper, ground coriander & cumin.
Heat to boiling.

Salad (mixed with fruit or nuts..whichever thing there is in the fridge.) will be the way for me. Mixed em up. Add a squeeze of lemon, salt and pepper.

Raisins, dried mango Rice. (Basmati Rice reccomanded.)
Seasoned wit salt,pepper and spices. yummy!!!

Believe it or not, my go to meal is soup. I usually have canned tomatoes, beans, veggie bullion, and dried herbs on hand so it it is easy enough to throw a stew or soup together. Lately I have been having a hankering for Cuban Black Bean Soup. I found a relatively easy recipe:

Cuban Black Beans & Black Bean Soup

I love when the leftovers of one meal naturally lend themselves to become part of the next nights meal. This Cuban Black Bean recipe into Black Bean Soup is a great example of this.

Cuban Black Beans
Combine the following:
1 tsp olive oil
1 large onion, coarsely chopped
2 garlic cloves, minced

Cook 2 minutes over medium heat and then add in:
2 tsp chili powder

Cook for 1 minute stirring constantly. Add in:
4 cups cooked black beans
a pinch of sugar
1 bay leaf
3-4 cups water or broth, enough to cover beans

Simmer over low heat uncovered for 15 minutes. Remove bay leaf and add:
2 tsp cider vinegar
1/8 tsp black pepper
1/2 tsp hot pepper sauce

Use a slotted spoon to serve this over rice with salsa.

This recipe inevitably leaves you with a lot of leftover broth, as well as some beans, a bit of rice and a bit of salsa.

Black Bean Soup
In a medium sized pot I combined all the leftovers from the above meal (broth, beans, rice, salsa and any veggies I have served with it)

Add:
chopped carrots
cilantro
container of tomato paste
1-2 tsp of powdered vegetable broth (I use a bouillon paste, but either should work)

I heated this until the carrots were tender and viola, super simple black bean soup.

salad, sandwiches, muesli, baked beans on toast, vegieburgers.

i eat like this most of the time. sometimes i will make spaghetti or curry but yeah fancy to me just means more types of ingredients, which is still fine for salads and sandwiches and the like.

Udon noodles, dashi broth, and cubes of tofu. For variety, I add chopped green onions, radishes, diced hard boiled egg, or any leftover.
Another one is brown rice (re heated is good), Brussels sprouts stir fried with mushrooms, red bell pepper, ginger, garlic, and soy sauce.
The best has to be: roasted soy nut butter, jam, and whole wheat toast.

Can of black beans dumped into a skillet with hot oil and garlic, saute a bit and mash them up a bit and throw them on a soft tortilla with some salsa.

Tofu eggless eggsalad. I mix together tofu, veganaise, mustard, pepper, pickle, and onion and have a couple of sandwiches along with no-salt chips and a romaine lettuce salad.
