You could try other types of poultry - ie. turkey or duck. Duck breast is fairly easy to make and tastes "meaty" so it may satisfy your boyfriends cravings for red meat.

One our our favourite recipes is black bean chili to which you add ground tofu or ground turkey (it makes it taste heartier). We eat it with a corn bread. You can find the original recipe here: http://www.canadianliving.com/food/black... but feel free to experiment a bit (ie. add the ground tofu or ground turkey).

The other thing you might want to try is any of the tofu products which stand in for meats - ie. tofu dogs or hamburgers or even mushroom burgers. Some are awful but some are quite good.

Another option is to to use cheese in recipes as your main source of protien and make things like macaroni & cheese or stuffed pastas (all of which are hearty).

i'm vegan and my family is totally not. my brother and sisters, however, love vegan tacos and spaghetti made with veggie crumbles (in the freezer section). both are cheap and easy. also, my dad (a HUGE meat-eater) loves my tofu scramble. basically, tofu, bell peppers, onions, salt, pepper and a lil garlic powder sauteed in olive oil and served over a warm tortilla. you can sprinkle cheese on top if you want. now i'm hungry. lol. :)

Make a vegetable pizza. Buy a pizza crust, the kind that are already baked. Then take a can of tomato paste- make sure it is paste and not sauce. Add to it 1/2 tsp each of garlic salt, oregano, and basil. Then add two sweetner packets or about a tsp or sugar. Mix it together and spread it on the crust. Then add all the vegetables you want. My favorites to use are onions, mushrooms, green peppers, olives, some chopped spinach, and top it with cheese and tomatoes. Top it high, it will cook down. My favorite cheeses to use are feta, mozzarella, and Parmesan. Bake it at about 425 for 10-12 minutes. It is a really tasty and healthy meal.

There a gazillions of meatless recipes.

Although Im a carnivore, I'm a HUGE fan of Pasta.
Of course, being Italian probably has something to do with it.

Peppers and eggs is a classic.

Bear Creek chilli (Darn good, it's called) mix. Yummy. No meat, but it has TVP or some tofuey-soyey deal that is meaty. It is delicious on cold days, and even better the next day.

Vegetable curry.

Fantastic's food black bean soup and their chilli soup is amazing.

Annie Chun's udon and miso soup.

*ahhh, all so very delicious. Even more so alongside a nice T-bone.
